Northwestern State University is located in Historic Natchitoches Louisiana, located 4 hours from New Orleans, Dallas, and Houston. This residential campus has over 1600 students living on campus. In conjunction with our residential dining facilities, Sodexo operates a remodeled retail space and coffee shop, a Chick-fil-a and a Steak 'n Shake, catering and concessions for the campus community. This position reports to the GM and along with a Catering Manager, Retail Manager and Operations Manager, oversees a wide variety of activities and events on campus. The successful candidate with be a multitasker that will provide excellent customer service with a can do attitude while directing and training a team of up to 50 in the kitchen at one time. The chef is in charge of menu development and keeping all the Sodexo culinary systems like DRIVE running smoothly for our board operation as well as high profile catering that is everything from Presidential Dinner Receptions to Student meetings as the position is an integral part of life on campus. We cater to Sky boxes in the football stadium, the ballroom and meeting rooms around campus and being the premier caterer for the community, we cater to the Events Center and other venues around Natchitoches that allows the Chef to become very visible to the community. The chef must be an excellent trainer and be able to get his vision across to a wide variety of experience levels in the kitchen, while keeping strict budget constraints in mind.   • manage the daily food production including production planning and controls;
  • ensure Sodexo Culinary Standards including recipe compliance and food quality;
  • manage food costing, controls and compliance;
  • develop menus and manage inventory;
  • have high expectations for customer service and quality of food;
  • have the ability and willingness to develop and train frontline employees;
  • have a passion for food and innovation;
  • have knowledge of special diets and allergens; and
  • knowledge of Sodexo Food Management System (FMS) is preferred.The ideal candidate has:
    • a strong culinary background, with the demonstrated ability to stay current with new culinary trends;
    • excellent leadership and communication skills with the ability to maintain the highest of standards and implements company policies;
    • previous experience working in a high volume facility; and
